Why does water turn yellow when boiling?

In the previous post on this page, we already considered why pasta products have a dark brown color.

At a high temperature, when the pasta is cooked, some of the natural dye is transferred from the pasta into the water, the pasta itself becomes slightly lighter and the water takes on a yellowish-brown color, and this is a completely natural process.


For example, the same process occurs when cooking buckwheat pasta. And if you follow the process of cooking ordinary wheat pasta very carefully, you can see that the water after it also becomes cloudy, that is, it turns a light color.
