Why is pasta dark brown in color?

This color is the result of certain processes in the production of pasta, which you can read about in this article

Why is the color of the paste brown? Our paste does not contain any dyes. The fact is that this product contains a large amount of an antioxidant called chlorogenic acid (200 mg per 100 g).


When the pasta is already formed, during production process, it undergoes a short-term heat treatment with steam at a temperature of 120° for sanitary purposes. At this temperature, the antioxidant acquires a dark brown color, similar to how coffee beans also turn brown during heat treatment. In addition to the antioxidant properties of chlorogenic acid, it has other very useful and important properties for the human body, but we have a separate detailed description here about it.
